Four Summer Dishes To Concoct

 

Summer is around the corner and with it comes an abundance of colorful fruit, herbs and vegetables at the various farmers markets dotted throughout New York City.  What better time to try your hand at some warm weather easy recipes for dishes that you and your guests can enjoy in your apartment, on the rooftop or in the backyard? Here are four super easy dishes to make:
 

Gazpacho

This raw vegetable soup is a summer classic and requires only a blender and some yummy vegetables—such as tomatoes, bell peppers, cucumbers and onions and garlic. Find a recipe you like online but if you’re too lazy, chop these babies up, put them in a blender, add some salt, pepper, olive oil and herbs of choice (parsley, chives and oregano work well) and blend into a puree. Enjoy with some rustic market bread.
 

Caprese Salad

This simple Italian dish requires no more than three main ingredients and very little culinary skills. Grab some vine ripened tomatoes, fresh basil and mozzarella. Layer alternating slices of tomato and cheese with basil in between. Drizzle with olive oil, balsamic vinegar and season with salt and pepper.
 

Pasta Salad

These salads are great because once you have a pasta base you can put virtually any combination of veggies that suit you and are available at the market. Cook pasta according to directions and then add your vegetables and dressing of choice. Bonus: pasta salads get even better the next day and the one after.  
 

Grilled Veggies

Eggplants, mushrooms, zucchini, bell peppers and many more market vegetables taste amazing with a bit of brushed olive oil and some seasoning. Take your pick at the market and experiment. You really can’t go wrong here.
